One of our favorite ways to enjoy fresh blueberries from Autumn Harvest Orchard is in homemade blueberry ice cream. It’s a simple recipe that lets the natural sweetness and flavor of fresh-picked berries shine.
For the best results, start by thoroughly washing your fresh blueberries under cool running water. Remove any stems or leaves, then gently pat them dry before blending.
A Healthier Twist
Instead of relying on a large amount of added sugar and heavy cream, try these easy substitutions:
- 4 cups fresh Autumn Harvest Orchard blueberries, washed and dried
- ½ to ¾ cup honey or pure maple syrup (instead of 1½ cups white sugar), adjusting to taste depending on how sweet your berries are
- 1 teaspoon pure vanilla extract
- A small pinch of salt
- 1 cup low-fat or whole milk
- 1 cup plain Greek yogurt (replaces the half-and-half while adding protein and a creamy texture)
- 1 cup heavy cream (instead of 2 cups, reducing saturated fat while keeping the ice cream rich)
Directions
- Wash and dry the blueberries, then puree them in a blender or food processor until smooth.
- Pour the blueberry puree into a medium saucepan. Stir in the honey or maple syrup and warm over medium-low heat just until the sweetener has dissolved. Avoid boiling the mixture, as gentle heating helps preserve the fresh blueberry flavor.
- Refrigerate the blueberry mixture until completely chilled.
