Summer temps are rising, stay cool with a healthy and delicious treat… Blueberry and Yogurt Ice Pops!
We at Autumn Harvest Orchards love providing easy, healthy recipes you can whip up together using nutritious ingredients. Since we’re growing blueberries and we have honey in stock, what better recipe to share than this delicious cold treat!
Makes 8 to 10 servings
- 2 cups blueberries
- 7 tablespoons water, divided
- 1/4 cup plus 2 tablespoons sugar
- Generous 2 cups Greek yogurt
- 1/2 cup honey
- 3 tablespoons freshly squeezed lemon juice
Combine the blueberries, 5 tablespoons water and sugar in saucepan, and bring to a simmer. Simmer over low heat for 3 to 5 minutes until the blueberries burst. Remove the pan from heat and set aside.
Mix together the yogurt, honey, lemon juice and remaining 2 tablespoons water in a bowl.
Spoon alternate layers of yogurt and blueberry mixtures into each ice pop mold, leaving 1/4 inch at the top to let the mixture expand when it freezes. Insert the ice pop sticks, and freeze.
